On 7 April, French Riviera Beach will host an exclusive four-hands dinner in honour of the culinary icon’s birthday, set against the breathtaking backdrop of the Arabian Gulf.
This one-night-only experience is a celebration of mentorship, mastery, and memory, as the two chefs return to the kitchen—not only as protégés but as storytellers of Robuchon’s enduring legacy. Their menu seamlessly blends Mediterranean elegance with contemporary French finesse, offering an intimate exploration of his influence.
An ode to culinary greatness
Honouring Joël Robuchon’s legacy, Chefs Kim Joinie-Maurin and Chef Ivan Russo present a six-course menu inspired by the flavours and techniques that shaped their journey. Chef Kim showcases Le Petit Pois, a delicate harmony of onion custard, pea soup, and mint, alongside Beef Tenderloin Rossini, enriched with foie gras and Périgourdine sauce.
Chef Ivan presents Le Carpaccio, wild seabream elevated with lime and Espelette pepper, and La Saint Jacques, where grilled scallops meet the depth of topinambour and Parmesan emulsion. The evening concludes with Le Citron, Chef Kim’s refreshing thyme-infused dessert, and Chef Ivan’s refined take on a classic French confection—a fitting finale to an unforgettable experience.
